Double Chocolate Muffin

Recipe:
2 large eggs
1 cup buttermilk (or 1 cup freshmilk + 1tbsp white vinegar as substitute)
1/2 cup vegetable oil
2 tsp vanilla extract
1 3/4 cup all purpose flour
2/3 cup natural unsweetened cocoa (I used Hershey’s cocoa)
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 1/4 cup light brown sugar
1 cup chocolate chunks + extra for topping

Yield: 18 pcs 3oz cupcake
