Low Fat Vegan No Oil Potato Salad EASY

You can add any vegetable that you want to this salad. I have made this with artichoke hearts, red bell pepper, collards, cabbage jalapeno pickled peppers. The list goes on and on. Anything your refrigerator has in it. The only thing I would not add is Tomatoes. I don’t know why but I cannot see this being good with tomatoes. The way I like to eat it is with bread crumbs sprinkled on top and ketchup. Yes I know it sounds weird but it is DARN good.
